This starch (E1442) is used as a food additive. It is based on tapioca and has high viscosity and excellent resistance to high temperature (U.H.T.), low pH, high tension and shear.
It also has excellent stability against thawing and freezing cycles.
Used in the dairy industry, especially whipped yogurt, processed cheese, low-fat cream, ice cream, ketchup, confectionery and bakery products, can be used as a stabilizer, emulsifier and fat substitute. Textured (gel)
